Hails from: Penedes, Spain. Grapes: Macabeo, Xarel-lo, Parellada
Lemon in colour. Very fine bubbles. Alluring as every good sparkling should be as soon as it’s poured. On the nose are red apples, lemons and intense freshness. The wine’s well balanced on the palate. It has a very “masculine” structure, by which I mean the mousse is more coarse than a tank-method or Champagne style of sparkling wine. Very fully textured in the mouthfeel. Lees-influence is clear here with the red apple aromas giving way to baked bread, yeast, lemon pith and a long finish. The ultimate match for me is seafood paella.
