★★ Great Wine Ruby-purple, lots of long legs. Cassis, prune, wood bark, cherry, plum, blackberry and smoke. Plush, racy red with blackberries, blueberries, prunes, liquorice, cassia bark, cinnamon and clove. It has lost some of the drop dead stunner feeling I had with this wine when I first tasted it in 2020, but still charming to drink.

Jade Vineyard Hyacinth Red

KEY POINTS

70% Cabernet Sauvignon & 30% Merlot blend with 14.6% abv. Cold maceration under 8°C for 3 days before temperature controlled fermentation at <28°C with a post-fermentation maceration for another 3 days. It then enjoys 10 months ageing in stainless steel tank with some oak treatment.

Grown in: Jinshan area of Helan Mountain East, Ningxia., CHINA.

Food Pairing

BBQ pulled pork, chicken with sticky glaze, steak and ale pie and proper fish & chip shop chips, ox tongue.

About the Producer

Jade Vineyard is located in the Jinshan region of China with vineyards planted on the eastern foothills of Mount Helan, beside Yinchuan City. The vines are nearly 1200m above sea level and cover an impressive 22 hectares. The winery is headed by owner Emma Ding and have been met with international acclaim, proving China is capable of producing extremely fine wine.
