Ben says
★ Good Wine “Pale orange in colour with a peachy, summer berry and lightly floral aroma. Smooth, lightly spicy and layered with fresh acidity. Surprisingly restrained and light, given its grape variety. Cleanly made and, if not especially exciting, a pleasure to drink.“
KEY POINTS
Varietal Cabernet Sauvignon with 13.5% abv. Grapes are crushed and the free-run juice is fermented off the skins to create a ‘Blanc de Noirs’ style.
Grown in: Ningxia, CHINA.
Food Pairing
Given the grape variety, there’s a nice bit of texture to this wine but not lots of acidity, so as a smooth and full bodied wine think along the lines of a lemon and Mediterranean herb traybake – and use the thighs so there’s plenty of flavour to match the lightly spiced notes of the Blanc de Noirs Cab.
