★ Good Wine Tio Pepe is one of the most iconic sherry brands in the world, but not enough folks have tried the Fino en Rama, which is their unfiltered sherry. Although even Tio Pepe suggest you drink it within 3 months of bottling, so I might have missed the boat on this one. Nevertheless it was super aromatic with dried citrus, baked bread and nuts. All its yeasty full-bodied charm was mouth-coating and tangy. Its finish was limey and bright. It is a perfumed style but I wanted more length, more bite. I’ll catch the release earlier next time…

Food Pairing

I would have Fino sherry happily with a whole tapas selection of different flavours, but it always pairs best with fish. Like all wines with good acidity, it works particularly well with salt and the alcohol in the sherry loves some fat, so fried fish like calamari is a winner here.

Gonzalez Byass, today not only just a sherry brand but also a leading wine company and distributor, was started by Manuel Maria Gonzalez Angel in 1835. The Tio Pepe label was started by Manuel in honour of his uncle, who had made the Fino sherry than Manuel first tasted.
